Sausage, Kale and Lentil Soup

1 large onion chopped
3/4 head of kale, chop and wash thoroughly
1 package of turkey or chicken sausage (I really like the apple or mango/jalapeno flavored all natural Aidells smoked chicken sausage from Costco)
1 lb. bag of lentils rinsed
3 bay leaves
2 tablespoons organic Better Than Bouillon, low sodium, chicken bouillon
1 tablespoon vegetable oil
water to cover ingredients


Chop onion and saute in vegetable oil over medium heat, cook until translucent. Chop sausage into chunks and add to onions, cook 5 minutes while stirring occasionally.

Drop kale and lentils into pot and cover with water. Put bay leaves and bouillon in with the rest of the ingredients. Cover and bring to a boil. Reduce heat and cook for 30 minutes.

Now it's time to enjoy!
