I saw someone make a vegan mac and cheese youtube and decided to try it with my own twist ... you won't be disappointed!
Baking sheet of broccoli roasted, 400 for 20 minutes (this is the best part, so I make a lot of it)
Brown Rice Pasta Fusilli (cook) -- I use the Tinkyada brand
Sauce: (blend well)
2-4 cloves garlic
1/4 cup nutritional yeast
1 1/2 cup cashews
1 heaping tablespoon dijon mustard
dash of red pepper flakes
water to cover ingredients
salt and pepper
Mix roasted broccoli, cooked rice pasta and sauce together in a big bowl and put in 9 x 13 glass casserole dish. Cook at 400 degrees for 20-25 minutes.
