Cardamom Rice with Corn


We were at a baby shower recently and someone brought this dish. It was so good that we had to ask how they made it...


2 cups uncooked jasmine rice
3 cups water (if using a pressure cooker to cook rice)
8-10 crushed cardamom pods
Sprinkle of ground clove
3-4 garlic cloves (chopped)
1/4 cup vegetable oil
2-3 cups frozen corn
Salt and pepper

Put rice and water in the pressure cooker and start cooking.

On the stove put vegetable oil, chopped garlic, crushed cardamom pods, and ground clove in a skillet. Cook over low heat. Add corn, turn heat up to medium to cook/brown corn. When rice is done, mix in with other ingredients. Salt and pepper to taste. Serve lukewarm.
