Vegan Chocolate Cake
2 cups white sugar
3 cups all purpose
2 teaspoons baking soda
1/2 teaspoon salt
1/2 cup unsweetened cocoa powder
2 1/2 cup cold coffee
1 cup vegetable oil (you can substitute 1 cup apple sauce for a healthier alternative)
2 tablespoons white vinegar
1 teaspoon vanilla extract
Preheat oven to 350 degrees.
In a large bowl, mix dry ingredients, then mix in wet ingredients. Stir well. Pour in two 9 inch round cake pans or one 9x13 glass dish. Bake for 40 minutes or until a toothpick inserted into center of cake comes out clean.
(This can also be used for cupcakes. Reduce cooking time to 25 minutes.)
Next time: Vegan chocolate frosting!!
